Cucumber & Liberté yogurt Gazpacho
Fresh and light : enjoy it as a meal or as an entree

Ingredients
2 cucumbers, peeled, seeded and diced
1/2 garlic clove slice
2 teaspoons fresh dill, chopped (10 ml)
1 cup chicken or vegetable broth(250 ml)
1 cup Liberté yogurt, plain (250 ml)
1/2 cup sour cream 5.5% (125 ml)
1 1/2 teaspoon white wine vinegar (7 ml)
3/4 teaspoon salt (3 ml)
1/2 teaspoon pepper (2 ml)
Preparation
Mix cucumbers, garlic, dill and ¼ of broth in blender until puree.
Then, add remaining broth while blender is working.
Put purée in large bowl and add in yogurt, sour cream, white wine vinegar and pepper.
Gently mix, cover and refrigerate before serving.
